About the author

James Walters, a self-taught chef and the visionary behind the Arabica Group, began this culinary journey from an 8ft Borough Market stall, swiftly earning a loyal following. Today, Arabica supplies fresh meze, spices, baklava, and specialty ingredients to a diverse range of food sectors, from quaint delis to prestigious hotels. Building on the success of his market ventures, James opened Arabica Bar & Kitchen in Borough Market in 2014, followed by Arabica Kings Cross in 2019.
