 Tea is a popular non-alcoholic beverage that maintains exclusivity as well as mass appeal for respite and relaxation. Tea is fast gaining importance for its health benefits as a nutraceutical. In addition to its global end-use, tea plantations as a whole are undergoing a transition towards mechanization, and agro-technolotgies for farm mechanization have been rationalized. With the advent of biotechnological approaches, management of genetic resources and plant improvement are evolving, both for improving productivity and quality under normal and stress environments.

Tea manufacture is also undergoing process of transformation due to the advent of new machines with precise and controlled steps of manufacture. Pre-withering machine is a disruptive concept in tea processing and is highlighted in this book. Various diversified health care products e.g. theaflavins, polyphenols, theanines decaffeinated tea etc. are getting place in the market. Fast teas viz., Ready-to-Drink teas, tea concentrates, instant tea, tea based juices and tea wines are in queue for impacting the markets.

In this book, effort has been made to bring together the latest advances on aspects of tea husbandry, physiology, biochemistry, manufacture and biotechnology to give a one stop exposition of status on Tea Technology to the reader.

Romesh Kumar Sud obtained M.Sc. Agri. Degree from Punjab University Chandigarh and Diploma in Bee-Keeping (Agri. Deptt. Punjab) soil conservation (DVC Hazaribagh), Food Processing (Deptt. of Agri. Himachal Pradesh) and foreign trade (Hellenic Foreign Trade Board, Athens, Greece). During his career of 48 years gained all round experience in varied Hort-Agro fields I.E. farm management, Nursery Raising, Crop Culture specialization (Tuber crops, Vegetables, Herbs, Cereals, Temperate Horticulture crops), Essential oil extraction, Post Harvest Technology, Food Processing, Landscape Designing, Art Designing and Creation, Environment management, soil conservation. During his career in the Himachal Pradesh State Government in the Agriculture Department. He was deputed to hold assignments in the Forest Department HP for preparation of soil conservation Plan for Sutlej and Beas catchment basins and in the Council of Scientific and Industrial Research (Central Government) as Farm Superintendent Drug Farms Jammu. In the year 1989 National Building Construction Corporation, New Delhi, assigned the job of Environment Management in their International Project in Nepal. USAID consortium selected as a Consultant and assigned the job to study and prepare a Project Report on "Off Season Vegetable Culture in Himachal Pradesh" Romesh Kumar Sud became a member of "Floriculture International" a Journal of International repute. Assumed the charge as President of and all India Society (PARASPAR MAITREE - Reg. No. 48063/2004) for social education of the population in villages particularly the farmers, educated un-employed youth, non-agricultural workers for extension education and information technology as the basis for resurgence of the village economy. He was elected Vice President of "Utilization of Science and Technology for Uplift of Rural Population" BARI - Sitapure, U.P. Dr. Sud was my First batch student when I started my teaching career at, Khalsa College, Amritsar. He was one of the most intelligent and hard working student. He had spent days collecting information and compling it for the benefit of budding research workers and NGO's. No more he is there to see his labour of love. How sad I feel to write this obituary of my own student who was much younger. MAY GOD KEEP IN HIS CARE AND LOVE.
