This book gives a comprehensive review of image processing in medicine with enough detail to be very useful.
This is the second edidition, the first being equally comprehensive and useful, also in a practical sense, for understanding what goes on in modern computer processing of medical images.
The requirement for mathematical understanding is somewhat varied but with a reasonably firm grip on undergraduate mathematics most of the book is clear.
